Salsify is the edible root of a plant with the botanical name of Tragopogon porrifolius, part of the Asteraceae family. It’s native to the Mediterranean region of southern Europe and has historically been cultivated in the counties of Girona.

Salsify enjoys a long gastronomic tradition in the county of La Selva, forming part of the county’s culinary tradition since ancient times and used as a side ingredient in many stews.

The salsify season stretches from June to November. You can find it in municipal markets and in some shops close to the areas where it’s grown. If you’d like to try it in a stew, it’s available all year round in restaurants of La Selva. You can go on the “Salsify Route” launched by the Hospitality Association of La Selva, in which most its member restaurants take part. You can also try it at the Salsify Gastronomic Show held in November, coinciding with the Festa Major Petita (MinorTown Festival) of Vidreres.
